Feijoa Cake

Ingredients

  • ½ cup milk
  • 2 eggs
  • 1 ¼ cups sugar
  • 1 cup mashed feijoas
  • 1 teaspoon vanilla essence
  • 75g butter (soften in the microwave)
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt

Instructions

  • Preheat oven to 180°C.
  • Place the milk, eggs, sugar, feijoas, vanilla and butter in a food processor and process until smooth.
  • Place the dry ingredients in a bowl, then pour the wet ingredients in and mix.
  • Pour into a baking tin and bake for 40-45 minutes.
  • Once cool, dust with icing sugar.
