Mexican Beans

Ingredients

  • 4 ea. white onion, small dice
  • ½ c minced garlic
  • ½ c oil blend
  • 1, #10 can diced tomatoes
  • 1, #10 can pinto beans
  • 1, #10 can kidney beans
  • 1, #10 can black beans
  • ½ c ground cumin
  • ½ c chile powder
  • ¼ c ground coriander
  • ½ c granulated garlic
  • S&P, TT

Instructions

  • In a large stockpot over medium heat add oil
  • Sweat onion and garlic until tender
  • Add tomatoes and simmer for 10 minutes
  • Add remaining ingredients and simmer for 1 hour skimming often
  • Adjust seasoning as needed
