Mexican Beans

Ingredients
- 4 ea. white onion, small dice
- ½ c minced garlic
- ½ c oil blend
- 1, #10 can diced tomatoes
- 1, #10 can pinto beans
- 1, #10 can kidney beans
- 1, #10 can black beans
- ½ c ground cumin
- ½ c chile powder
- ¼ c ground coriander
- ½ c granulated garlic
- S&P, TT
Instructions
- In a large stockpot over medium heat add oil
- Sweat onion and garlic until tender
- Add tomatoes and simmer for 10 minutes
- Add remaining ingredients and simmer for 1 hour skimming often
- Adjust seasoning as needed
